Toor dal (pigeon peas) Drumstick (veggie) Vegetables (carrot, brinjal, etc.)d Onion Tomato Tamarind – small lemon-sized Sambar powder Salt Turmeric
Pressure cook the toor dal with turmeric and water until soft. Mash it well and keep it aside—it’s the soul of your sambar!
Boil veggies with salt and a bit of turmeric until soft. Add chopped tomatoes and simmer for a few minutes.
Soak tamarind in warm water, squeeze out the juice, and add it to the cooked veggies. Add sambar powder, mix, and boil for 5–7 minutes.
Pour in the mashed dal and combine everything well. Simmer the sambar until it’s thick and aromatic. Adjust salt.
In coconut oil, splutter mustard seeds, curry leaves, dry red chilies & a pinch of hing. Pour this tadka into the sambar. Done!
