Soak moong dal for 2–3 hours. Drain and sauté with spices, green chili, ginger, and hing until dry and aromatic.
Mix maida, ghee, and salt. Add water gradually to make a stiff dough. Let it rest for 20 minutes for perfect texture.
Roll dough into ovals, cut in half, make cones, fill with moong dal stuffing, and seal edges tightly with water.
Heat oil on medium flame. Fry samosas until crisp and golden brown. Don’t overcrowd the pan!
Serve hot with green chutney or tamarind dip. Perfect for tea-time snacks, rainy evenings, or festive treats!
