Flour Ghee Salt Water Moong dal Fennel seeds Cumin Asafoetida Green chili Ginger Garam masala Salt Oil
Soak moong dal for 2–3 hours. Drain and coarsely grind. Sauté with spices, green chili, and ginger until dry and aromatic.
Mix flour, salt, and ghee. Add water gradually to form a stiff dough. Cover and rest for 20–30 minutes.
Roll small dough balls, place filling in the center, and seal edges carefully. Flatten gently with hands.
Fry kachoris on medium-low heat until golden brown and puffed up. Don’t rush — slow frying ensures crispiness.
Serve hot with tamarind or green chutney. Crispy outside, spicy inside — a snack worth every bite!
