Begin by soaking your lentils for 30 minutes. This makes them cook faster and gives the dal a smooth texture. Rinse well before cooking!
Heat ghee in a pan, then add cumin seeds, finely chopped onions, ginger, garlic, and green chilies. Sauté until golden brown, releasing a fragrant aroma.
Stir in chopped tomatoes, turmeric, coriander powder, and garam masala. Cook until the tomatoes soften and blend with the spices to create a flavorful base.
Add the soaked lentils to the tempering, mix well, and add water. Let it cook until the dal is soft and the flavors meld together. Adjust consistency to your preference.
For that authentic dhaba touch, prepare another tadka by heating ghee and adding cumin seeds, red chilies, and garlic. Pour this sizzling tadka over the dal just before serving.
