Rice Beetroot Onion Green chilies Mustard seeds Curry leaves Salt Turmeric Oil Ginger-garlic paste Lemon juice Cashews
Heat oil in a pan. Add mustard seeds, curry leaves, and chopped onions. Add green chilies and sauté until soft. Add ginger-garlic paste if using.
Stir in the grated beetroot. Add salt and turmeric. Cook for 5–7 minutes until the beetroot turns soft and juicy.
Add your cooked rice to the beetroot mix. Gently toss until every grain is coated with that beautiful pink color.
Add roasted cashews or peanuts for crunch. A squeeze of lemon juice enhances the taste. Mix well and cook for 2 more minutes.
Serve hot with curd, raita, or papad. A colorful and wholesome dish in under 20 minutes—perfect for home or lunchbox!
