Rice Curd (yogurt) Milk (optional for creaminess) Salt to taste Mustard seeds Urad dal Green chili Ginger Curry leaves Oil
Use soft-cooked rice. Mash lightly while it’s still warm. Let it cool completely before mixing in curd.
Add curd and a little milk to the cooled rice. Mix well until smooth and creamy. Add salt to taste.
Heat 1 tbsp oil. Add mustard seeds. Let them pop. Then add urad dal, chopped green chili, grated ginger, and curry leaves.
Pour the hot tempering over the curd rice mixture. Stir well to combine. Adjust seasoning if needed.
Garnish with coriander, pomegranate seeds, or grated carrot for extra flavor, color, and crunch.
Serve chilled or at room temperature. Great with pickle, papad, or a side of veggies. Simple comfort in every bite!
