A silky-smooth cashew fudge, Kaju Katli is a festive favorite in every Indian household.

Cashews Sugar Water Cardamom powder Ghee
Blend cashews into a fine powder without letting them release oil.
Boil sugar and water till you get a one-string consistency.
Stir in the cashew powder and mix well on low flame to avoid lumps.
Stir continuously till the mix thickens and leaves the sides of the pan.
Roll the warm dough thin and slice into diamond-shaped katlis.
Let it cool and enjoy your soft, homemade Kaju Katli – just like from the sweet shop!
