A traditional Maharashtrian snack made with fresh coriander and besan!

Coriander leaves Gram flour (besan) Green chili Ginger Garlic Sesame Spices
Rinse coriander thoroughly and finely chop for best texture.
In a bowl, mix coriander, besan, ginger-garlic paste, chili, sesame, and spices.
Add water little by little to make a thick, sticky dough—not too runny!
Spread dough in a greased tray and steam for 15–20 mins till set.
Allow steamed vadi to cool completely, then cut into square or diamond shapes.
Shallow fry vadi in oil until golden brown and crispy on both sides.
Serve hot with green chutney or ketchup—perfect tea-time snack!
