Oats Moong dal Cumin seeds Ginger Garlic Veggies Turmeric Cumin powder Salt
In a pan, dry roast 1 cup of oats and 1/4 cup moong dal for 2-3 minutes until they turn slightly golden. This adds a wonderful aroma.
Heat some oil in a pan and add cumin seeds, mustard seeds, chopped ginger, garlic, and green chilies. Sauté till fragrant.
Add finely chopped vegetables like carrots, peas, and beans. Stir-fry for a minute to keep them crunchy and fresh.
Add the roasted oats and moong dal to the pan. Stir well and let it cook for 2 minutes to combine the flavors.
Pour in 2 cups of water, add salt, and let the mixture cook on low heat until the oats and dal are soft and well-cooked.
Garnish with fresh coriander leaves, a squeeze of lemon, and enjoy this healthy, hearty oats khichdi, perfect for a nourishing meal!
