Basmati rice Marinated mutton Onions Tomatoes Ginger-garlic paste Yogurt Biryani spices Fresh mint Coriander Ghee Saffron
Mix mutton with yogurt, spices, ginger-garlic paste. Marinate for at least 2 hours or overnight for best taste.
Slow cook the marinated mutton with onions and tomatoes until soft and juicy. This forms the biryani base.
Soak and boil rice until 70% done. Drain and set aside for layering.
In a heavy pot, alternate layers of rice, cooked mutton, herbs, saffron milk, and fried onions.
Cover tightly and cook on low heat for 20-30 mins. Let the steam do the magic!
Fluff gently, serve hot with raita, salan, or boiled eggs. A feast for the senses!
