Palak Paneer is a classic Indian dish made with fresh spinach and paneer (cottage cheese), cooked in a fragrant, spiced gravy. It’s delicious, nutritious, and easy to prepare!

Blanch fresh spinach in boiling water for 2-3 minutes. Then, blend it into a smooth puree. This step locks in the nutrients and gives the dish a vibrant green color.
Heat oil in a pan. Sauté onions, ginger, and garlic until golden. Add tomatoes and cook until soft. Then, add your spices like cumin, turmeric, and garam masala to build a rich base.
Pour in the spinach puree and stir. Add cubed paneer to the mix, cooking gently until the paneer absorbs the flavors of the gravy. Simmer for a few minutes.
Garnish with fresh coriander leaves and serve hot with roti, naan, or rice. This dish is a nutritious, satisfying meal perfect for any time of day!
