Cut your paneer into cubes and sauté them lightly in oil until golden brown. This gives them a crispy exterior that will soak up the rich curry.
Sauté onions, tomatoes, ginger-garlic paste, and your freshly ground spice mix. Add curry leaves and cook until aromatic. This is the heart of the dish!
