Ingredients
  

Main Ingredients:

  • 1 Large Pomegranate
  • 2 Cups Cucumber, diced
  • ½ Cup Red Onion
  • ½ Cup Crumbled feta cheese
  • ¼ Cup Walnuts
  • ¼ Cup Fresh mint leaves

For the Dressing:

  • 2 tablespoon Olive Oil
  • 1 tablespoon Honey
  • 1 tbso Balsamic Vinegar
  • 1 teaspoon Dijon Mustard
  • Salt and Pepper as per Taste

Instructions
 

Prepare the Pomegranate

  • Cut the pomegranate in half and hold it over a bowl. Tap the back of the pomegranate with a wooden spoon to release the juicy seeds (aka arils).
  • It’s a bit messy, but so worth it! You’ll end up with a bowl full of sweet, juicy seeds that will make your salad sparkle.

Prepare the Vegetables

  • Wash and dry the cucumbers, then slice them into thin rounds or half-moons, depending on your preference. They’re super refreshing and add the perfect crunch to the salad.
  • Thinly slice the red onion—this adds a little bite and color to your dish.
  • Chop up the fresh mint leaves for a burst of aromatic freshness.
  • Crumble the feta cheese, and toast the walnuts in a dry skillet for about 2-3 minutes until fragrant and golden.

Make the Dressing

  • In a small bowl, whisk together, Olive Oil, honey, Balsamic Vinegar, Dijon Mustard, Salt and Pepper
  • Whisk until smooth, and taste for balance—if you like it sweeter, add more honey!

Assemble the Salad

  • First, in a large bowl, combine the cucumber, pomegranate seeds, red onion, and mint. Then, drizzle the dressing over the top and toss gently to ensure everything is evenly coated. As you mix, you’ll notice the vibrant colors coming together—it's a feast for the eyes as well as the taste buds!

Garnish and Serve

  • Next, top your salad with crumbled feta and toasted walnuts for an added burst of flavor and crunch. Then, serve immediately to enjoy the perfect blend of sweet, salty, and tangy flavors.
