In a small bowl, whisk together, Olive Oil, honey, Balsamic Vinegar, Dijon Mustard, Salt and Pepper
Whisk until smooth, and taste for balance—if you like it sweeter, add more honey!

First, in a large bowl, combine the cucumber, pomegranate seeds, red onion, and mint. Then, drizzle the dressing over the top and toss gently to ensure everything is evenly coated. As you mix, you’ll notice the vibrant colors coming together—it's a feast for the eyes as well as the taste buds!
