Ingredients
  

For Paneer Bhurji:

  • 200 gram Paneer (cottage cheese), crumbled
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 1 Onion, finely chopped
  • 1 Tomato, finely chopped
  • 1 Green chili, finely chopped (adjust according to taste)
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Red chili powder
  • ½ teaspoon Garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

For Toast:

  • 4 slices of bread (whole wheat or white)
  • Butter or oil for toasting

Instructions
 

Prepare the Paneer Bhurji

  • First, heat 1 tablespoon of oil in a pan over medium heat until it’s nice and warm.
  • Next, add 1 teaspoon of cumin seeds. Allow them to splutter for about 30 seconds, which helps release their flavor.
  • After that, add 1 finely chopped onion to the pan. Sauté the onions until they turn golden brown, which will take about 3-4 minutes.
  • Then, mix in 1 finely chopped tomato and 1 finely chopped green chili. Cook this mixture until the tomatoes soften and the oil begins to separate, which should take about 3 minutes.
  • Now, stir in ½ teaspoon of turmeric powder, ½ teaspoon of red chili powder, and salt to taste. Make sure to mix everything well.
  • Next, add 200 grams of crumbled paneer along with ½ teaspoon of garam masala. Cook for an additional 2-3 minutes, stirring occasionally to ensure the paneer is well-coated with the spices and heated through.
  • Finally, garnish the dish with freshly chopped coriander leaves and set it aside, ready to be served with toast.

Toast the Bread

  • Start by spreading butter on one side of each slice of bread to add flavor.
  • Then, heat a pan or toaster. Place the bread slices butter-side down and toast them until they turn golden brown and crispy, which should take about 2-3 minutes per side over medium heat.

Assemble and Serve

  • First, place a generous serving of the prepared paneer bhurji on a plate.
  • Next, arrange the crispy toast slices alongside the paneer bhurji for a perfect meal like paneer bhurji with toast.
  • For an extra touch, you can add a side of salad or yogurt to complete your delicious dish!

Notes

Customizing Paneer Bhurji

Vegan or Dairy-Free Option: Try tofu instead of paneer for a vegan twist. Press the tofu to remove excess moisture, then crumble it just like paneer. It's a great substitute!
Spice Levels: Adjust the heat to your liking! Add more green chilies for extra spice, or use mild paprika for a gentler kick. 
Cheese Lovers: For an extra creamy bite, sprinkle cheddar or mozzarella on top or mix it into the Bhurji while cooking. Yummm!
