Ingredients

  • 1 Cup Mixed vegetables (carrots, beans, capsicum)
  • 1 Onion medium, finely chopped
  • 3 Garlic cloves, minced
  • 1 Ginger inch piece, grated
  • 1-2 Green chilies finely chopped (adjust for spice level)
  • 2 tablespoon Soy sauce
  • 4 Cup Vegetable broth
  • 1 tablespoon Corn starch (for thickening)
  • 2 tablespoon Oil
  • Salt to taste
  • Pepper to taste
  • Spring onions for garnish

Instructions

Chop the Vegetables

  • First, thinly slice the cabbage, carrots, mushrooms, and bell peppers. These will add great texture and flavor to your soup!

Prepare the Broth

  • Next, boil some vegetable stock in a pot. Then, season it with soy sauce, vinegar, and your favorite spices. This will create a tasty base for your soup.

Sauté the Vegetables

  • Meanwhile, heat some oil in a pan and sauté garlic, ginger, and onions. Once they’re fragrant, add the chopped vegetables and cook them for a few minutes to bring out their flavor.

Combine Broth and Vegetables

  • Afterward, pour the prepared broth into the sautéed veggies and let it simmer for 5-7 minutes. This allows all the flavors to blend together.

Add Cornstarch Slurry

  • To thicken the soup, create a slurry by mixing cornstarch and water. Add it to the soup, stir, and let it cook for a few more minutes until it reaches the right thickness.

Garnishing

  • Finally, garnish your soup with spring onions, crispy fried noodles, or roasted peanuts for an extra crunch! Voila, your Veg Manchow Soup is ready to enjoy!
