  • ½ Cup Finely chopped cabbage
  • 2 Green chilies, finely chopped (adjust to taste)
  • 1 Inch piece of ginger, grated
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • Salt to taste

For Tempering:

  • 1 tablespoon Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Sesame seeds
  • ½ teaspoon Asafoetida (hing)
  • A few curry leaves

Instructions

Prepare the Batter

  • First, drain the soaked rice, urad dal, and chana dal, then put them in a blender.
  • Next, add a little water to make a coarse batter that’s thick but pourable.
  • After that, transfer the batter to a large bowl and mix in yogurt, turmeric powder, red chili powder, and salt until well combined.
  • Then, add grated carrots, chopped spinach, green beans, cabbage, green chilies, and grated ginger, stirring everything together evenly.
  • Finally, gently stir in baking powder and baking soda, making the batter a bit airy.

Prepare the Tempering

  • Meanwhile, heat oil in a small pan over medium heat.
  • Once hot, add mustard seeds and let them splutter.
  • Then, add sesame seeds, asafoetida, and curry leaves, frying for a few seconds until fragrant.
  • After that, pour this tempering over the batter and mix well.

Cook the Handvo

  • Now, preheat your oven to 375°F (190°C) or preheat a stovetop pressure cooker without the weight. Grease an ovenproof baking dish or round cake tin with oil.
  • Next, pour the batter into the prepared dish and smooth the top with a spatula. If you’re using an oven, bake for 40-50 minutes or until a toothpick comes out clean.
  • Alternatively, for the stovetop cooker, place a trivet or an inverted bowl inside, set the dish on top, cover with the lid (without the weight), and cook on low heat for 40-50 minutes.

Serve

  • Finally, let the Handvo cool for a few minutes before slicing.
  • Serve vegetable handvo recipe warm with yogurt or chutney for a delicious treat!
